Raw Vegan Cashew and Tomato Canap

I made this because I had a hankering for Deviled Eggs.

Ingredients

1 cup cashews, soaked 2-3 hours
1/4 – 1/2 tsp sea salt (to taste)
3/4 tsp curry powder
1/2 tsp turmeric
1/4 tsp chili powder
1/4 cup onion finely chopped
1 tbsp lemon juice
1/3 cup water
Dash paprika

3 medium sized tomatoes sliced medium thickness
1/4 tsp black pepper
1/4 tsp sea salt
1 tsp oregano

Instructions

Place the cashews in a food processor. Add the salt, spices, and lemon. Pulse till the cashews are broken down.
Run the motor and drizzle the water in. Add onion.  Continue blending till the pate is smooth. Scrape the sides of the bowl frequently for consistent blending.

Sprinkle black pepper, sea salt and oregano onto tomato slices.  Place a rounded tablespoon of pate on each tomato slice. Sprinkle lightly with paprika, and serve.
