<p>After being a bit frustrated at trying to calculate how much of each item I added to a smoothie or juice, I did some searching.  I needed to find a better way.  We all know that juicing is a great fast to reboot your body for healing.  But knowing what you are taking in allows you to avoid surprises.  For instance.  You can say &#8220;I&#8217;ve given up on Caramel Macchiato&#8217;s and just juice because I just couldn&#8217;t take the calories.&#8221;  Just to be surprised that your juice has as many, or maybe more calories that your latte.</p>

<p>Put into your juicer and drink as soon after juicing as possible. I like to have mine over ice sometimes.</p>

										<content:encoded><![CDATA[<p>I read online about doing a juice fast and I was immediately intrigued.  The reported benefits, more energy, deeper spiritual connection, overcoming personal blockages, weight loss and healthier body, had a great attraction to me.  I am not sure what type of fast Moses did on the mountain or that Jesus did in the wilderness.   It was probably not juicing, but I would say that juicing is a radical departure from my regular day-to-day diet.</p>
<p>A usual day for me starts with a large home made mocca latter using almond milk for health of course, and Harvest Crunch cereal topped with fruit and blueberry yogurt.  Then on the side I would have a buttered freshly baked store bought and an apple.  I would usually not eat again until supper which would be a large meal, more bread and dessert.   This is the meal plan that has seen my weight increase steadily like the stock market over the past 10 years.</p>
<p>At 258lbs, I realized that I was <a href="http://www.fatsickandnearlydead.com/">Fat, Sick and Nearly Dead</a>.  Something had to be done.  So with very little preparation I started my juice fast on Monday January 30th, 2017.</p>
<p>The first two days my head was a bit foggy and I was tired most of the day.  From day 3 to day 7 was quite excellent with new mental clarity and energy.   The end of the day 7 I started taking a multi vitamin because I found I was having muscle spasms a bit and realized I must be missing something.   Not taking any chances, I will continue to take Centrum multi-vitamins.  The spasms stopped after taking them.</p>
<p>The surprising thing is that my friends have asked a lot about this fast.   A client of mine and her husband decided to start the fast together so on my day 8, they started their day 1 of a fast.</p>
<p>I am hoping to continue the fast for 40 days.  The way I feel now, I see no reason why I wont make the 40 days.  No reason except my wife is not doing the fast with me.  Having a newborn and breastfeeding makes it unwise.  When she makes dinner for herself and the smell of spices and my favorite meals wafts through the air, and the thought of having a hot meal fills my mind, I start thinking that maybe a ten day fast is admirable.</p>
<p>I believe that the spiritual benefits wont start until after 10 days.  So I will persist.</p>
<p>Many have asked me to post some recipes of juices I make.   I will do this and tag them under Juice Fast.  But below I will post one that I have often:</p>

This makes an awesome topping.</p>
<p>I added another later.  I made two batches of the above but in the 2nd batch I omitted the vanilla and added cocoa.  Makes a fudge taste.</p>

<h3><span style="color: #000080;"><strong>Cauliflower Rice</strong></span></h3>
<p>1 large head of cauliflower<br />
1 bunch scallions (or onion)<br />
2 cups of kale or spinach<br />
1 cup green peas<br />
3 garlic cloves<br />
olive oil<br />
Sprinkle of curry powder<br />
Sprinkle of paprica</p>
<p>Place Cauliflower in blender and blend until rice like.  Add rice cauliflower to bowl and add in other ingredients (Be sure kale and spinach are chopped to small pieces). Mix well and serve.</p>
<h3><span style="color: #000080;">Zucchini Rolls</span></h3>
<p>There are three fillings that you can add to make your zucchini roll.  I use all three in mine.  You can use one, two or all.</p>
<p><strong>Marinara Sauce</strong></p>
<p>1 clove garlic<br />
1 cup sun-dried tomatoes, softened<br />
1/4 cup olive oil<br />
1/2 lemon, juice from<br />
4 dates, soaked until soft and pitted<br />
2 tablespoons water (if needed)<br />
1 teaspoon italian spices<br />
1. With food processor running, drop garlic in and chop fine.</p>
<p>2. Add remaining ingredients. Process until smooth.</p>
<p><strong>Spinach Walnut Pesto</strong></p>
<p>2 cloves garlic<br />
3 cups spinach<br />
1/3 cup olive oil<br />
1/2 cup walnuts, soaked at least 6 hours, drained and dried<br />
1/2 lemon, juice from<br />
1. With food processor running, drop in garlic.</p>
<p>2. Add remaining ingredients and process until a paste is formed.</p>
<p><strong>Cashew Cheese</strong></p>
<p>3/4 cup cashews, soaked overnight, drained<br />
1 clove garlic<br />
1 teaspoon lemon juice<br />
pinch Himalayan Salt and pepper<br />
1. Place all ingredients in food processor. Pulse until a cottage cheese texture is achieved. Add a little water if necessary.</p>
<p>Take zucchini and using a potato peeler, peel thin layers.  Lay the zucchini flat and layer your fillings on the length of it.  The roll together and enjoy.</p>
<p><strong><span style="color: #000080;">Curry Dish</span></strong></p>
<p><strong>Curry</strong></p>
<ul>
<li>3 cups mixed mushrooms (button and shitake)</li>
<li>2 medium-sized zucchini, diced small</li>
<li>1/2 cup broccoli, diced small</li>
<li>2 punnets of cherry tomatoes cut into quarters</li>
<li>Juice of ½ a lemon</li>
<li>3 tbsp of Tamari sauce</li>
<li>2 tbsp of olive oil</li>
<li>2-3 tbsp curry powder</li>
<li>Salt to taste</li>
</ul>
<p><strong>Method</strong>: Mix all the ingredients together in a large bowl.</p>
<p><strong>Curry sauce</strong></p>
<ul>
<li>1 stalk celery chopped fine</li>
<li>1 clove garlic</li>
<li>Juice of 1/2 a lemon</li>
<li>1 tbsp tamarind paste</li>
<li>1cm cube of fresh ginger</li>
<li>1/2 cup fresh coriander</li>
<li>1 tbsp curry powder</li>
<li>1/2 cup desiccated coconut</li>
<li>1/2 cup coconut milk</li>
<li>1/2 cup water</li>
<li>Salt to taste</li>
</ul>
<p><strong>Method:</strong> Blend all ingredients in a high power blender until smooth and creamy. You may need to add more water if it is too thick.</p>

<h2><span style="color: #0000ff;"><strong>About Today</strong></span></h2>
<p>Day two was quite interesting as I remember this stage the first time we did this experiment.  And of course we abandoned it after 2.5 weeks for no good reason.  Actually, it may have been a craving for chicken.  (I must say after we had chicken, we immediately regretted it).</p>
<p>But Day 2 started with the usual breakfast, cereal and fruit.  We are also avoiding drinking anything for 30 minutes before we eat and for 2 hours after we eat.</p>
<p>Lunch was left overs from our Raw Food Cookout that we had on Day 1.</p>
<p>Dinner was Zucchini Pasta.  It was the first time I tried this recipe from <a href="http://www.rawmazing.com/cucumber-noodles-with-a-dijon-tarragon-vegan-cream-sauce-and-give-away/">www.rawmazing.com</a>.  But I tweaked it a bit because the Rawmazing recipe had a small portion of the process was cooked.  I wanted to avoid cooking any part of it so I tweaked it a bit.</p>
<h3><span style="color: #000080;">Cucumber Noodles with a Dijon Tarragon Vegan Cream Sauce</span></h3>
<p>serves 4</p>
<p><span style="color: #000080;"><strong>Tarragon Dijon Vegan Cream Sauce (raw)</strong></span></p>
<p>1 cup cashews, soaked in water until soft, drained and rinsed<br />
1 cup water<br />
3 tablespoons dijon mustard<br />
1 tablespoon red miso &#8211; I made my own.  See recipe below<br />
1 tablespoons lemon juice<br />
1/2 teaspoon lemon zest<br />
1 teaspoon balsamic vinegar<br />
3 tablespoons chopped fresh tarragon<br />
Himalayan salt and pepper<br />
Place all ingredients except tarragon in high-speed blender. Blend until smooth.<br />
Pulse in the tarragon and salt and pepper. You do not want to blend it in, just incorporate it.</p>
<p><strong><span style="color: #000080;">Noodles (raw)</span></strong></p>
<p>3 – 4 cucumbers</p>
<p>Scrub the cucumbers and spiralize. You will want 6 cups of noodles.</p>
<p><strong><span style="color: #000080;">Tomatoes and Mushrooms (raw)</span></strong></p>
<p>2 cups cherry tomatoes<br />
2 tablespoon chopped ripe mango<br />
1 tablespoons olive oil<br />
1 tablespoon fresh cilantro<br />
2 teaspoons oregano<br />
2 cloves garlic chopped fine<br />
2 teaspoons of balsamic vinegar<br />
Himalayan salt and fresh ground pepper<br />
Place the tomatoes with the 2 tablespoon oil and other ingredients and a pinch of salt and pepper in bowl.<br />
Using a fork (I used a potato masher) crush the tomatoes and mix with other ingredients until clumpy but thoroughly mixed.</p>
<p><strong><span style="color: #000080;">Assembly</span></strong></p>
<p>Toss the cucumber noodles with the sauce.<br />
Place serving on plate and top with tomato mixture.</p>

1/8 cup  Raisins<br />
1/4 cup  Dried currents<br />
1/4 cup  Bran<br />
1/4 cup  Dried Coconut<br />
1/8 cup  Cranberries<br />
1/8 cup  Pumpkin Seeds<br />
1              Chopped banana<br />
1/4 cup  Organic Maple Syrup<br />
1/2 cup  Water</p>
