<p>Bowl full of fruit of choice (Strawberries)</p>
<p>2 cups cashews<br />
4 dates<br />
1 cup of water<br />
1 teaspoon of vanilla</p>
<p>Blend all on blender until it has a pudding consistency.  If too runny, add a few more cashews.  Blend well.<br />
This makes an awesome topping.</p>
<p>I added another later.  I made two batches of the above but in the 2nd batch I omitted the vanilla and added cocoa.  Makes a fudge taste.</p>

<h3><span style="color: #000080;"><strong>Cauliflower Rice</strong></span></h3>
<p>1 large head of cauliflower<br />
1 bunch scallions (or onion)<br />
2 cups of kale or spinach<br />
1 cup green peas<br />
3 garlic cloves<br />
olive oil<br />
Sprinkle of curry powder<br />
Sprinkle of paprica</p>
<p>Place Cauliflower in blender and blend until rice like.  Add rice cauliflower to bowl and add in other ingredients (Be sure kale and spinach are chopped to small pieces). Mix well and serve.</p>
<h3><span style="color: #000080;">Zucchini Rolls</span></h3>
<p>There are three fillings that you can add to make your zucchini roll.  I use all three in mine.  You can use one, two or all.</p>
<p><strong>Marinara Sauce</strong></p>
<p>1 clove garlic<br />
1 cup sun-dried tomatoes, softened<br />
1/4 cup olive oil<br />
1/2 lemon, juice from<br />
4 dates, soaked until soft and pitted<br />
2 tablespoons water (if needed)<br />
1 teaspoon italian spices<br />
1. With food processor running, drop garlic in and chop fine.</p>
<p>2. Add remaining ingredients. Process until smooth.</p>
<p><strong>Spinach Walnut Pesto</strong></p>
<p>2 cloves garlic<br />
3 cups spinach<br />
1/3 cup olive oil<br />
1/2 cup walnuts, soaked at least 6 hours, drained and dried<br />
1/2 lemon, juice from<br />
1. With food processor running, drop in garlic.</p>
<p>2. Add remaining ingredients and process until a paste is formed.</p>
<p><strong>Cashew Cheese</strong></p>
<p>3/4 cup cashews, soaked overnight, drained<br />
1 clove garlic<br />
1 teaspoon lemon juice<br />
pinch Himalayan Salt and pepper<br />
1. Place all ingredients in food processor. Pulse until a cottage cheese texture is achieved. Add a little water if necessary.</p>
<p>Take zucchini and using a potato peeler, peel thin layers.  Lay the zucchini flat and layer your fillings on the length of it.  The roll together and enjoy.</p>
<p><strong><span style="color: #000080;">Curry Dish</span></strong></p>
<p><strong>Curry</strong></p>
<ul>
<li>3 cups mixed mushrooms (button and shitake)</li>
<li>2 medium-sized zucchini, diced small</li>
<li>1/2 cup broccoli, diced small</li>
<li>2 punnets of cherry tomatoes cut into quarters</li>
<li>Juice of ½ a lemon</li>
<li>3 tbsp of Tamari sauce</li>
<li>2 tbsp of olive oil</li>
<li>2-3 tbsp curry powder</li>
<li>Salt to taste</li>
</ul>
<p><strong>Method</strong>: Mix all the ingredients together in a large bowl.</p>
<p><strong>Curry sauce</strong></p>
<ul>
<li>1 stalk celery chopped fine</li>
<li>1 clove garlic</li>
<li>Juice of 1/2 a lemon</li>
<li>1 tbsp tamarind paste</li>
<li>1cm cube of fresh ginger</li>
<li>1/2 cup fresh coriander</li>
<li>1 tbsp curry powder</li>
<li>1/2 cup desiccated coconut</li>
<li>1/2 cup coconut milk</li>
<li>1/2 cup water</li>
<li>Salt to taste</li>
</ul>
<p><strong>Method:</strong> Blend all ingredients in a high power blender until smooth and creamy. You may need to add more water if it is too thick.</p>

<h3>Ingredients:</h3>
<ul>
<li>2 Large Cucumbers</li>
<li>4 Large Black Mushrooms</li>

<li>1 Orange (juiced)</li>
<li>10 Sundried Tomatoes</li>

<li>1 Small Shallot Onion</li>
</ul>
<h3>Method:</h3>
<p>Slice the mushrooms and lay them out in a dish.</p>
<p>In the food processor add all the other ingredients (with the exception of the cucumbers) and process this into a paste, adding a little water to achieve desired consistency.</p>
<p>Pour the sauce over the mushrooms and mix in well. Place into the fridge to marinate for 30 minutes.</p>
<p>Just before serving, spiralize the cucumbers into noodles using a spiralizer.</p>
<p>Serve the noodles into bowls and serve the marinaded mushrooms and sauce over the top.</p>
<p>Serves 2.</p>

<p>(serves 4)</p>
<ul>
<li>1 medium head cauliflower</li>
<li>1 cup fresh peas</li>
<li>4 scallions, thinly sliced</li>

<li>2 teaspoons maple syrup</li>
<li>1 teaspoon grated fresh ginger</li>
<li>1/2 cup pine nuts</li>
<li>1 tablespoon chili flakes (optional)</li>
<li>pinch Himalayan salt and pepper</li>
</ul>
<p>1. Cut the cauliflower florets from the stem. Pulse in food processor until the cauliflower is the size of pieces of rice.</p>
<p>2. Stir in peas and scallions.</p>
<p>3. Whisk together  lemon juice, lemon zest, cumin, maple syrup, and ginger. Pour over cauliflower mixture and stir to combine.</p>
<p>4. Top with pine nuts and chili flakes. Salt and pepper to taste.</p>

<p>2. Refrigerate until set. Make sure you give this enough time. It will take a few hours.</p>

<p>1. Slice strawberries thinly.</p>
<p>2. Layer crunch, ganache, chocolate “mousse”, strawberries, vanilla “mousse”, strawberries, vanilla “mousse”, chocolate “mousse”, ganache and crunch.</p>
<p>3. Alternatively…layer any way you want.</p>
<p>*I layered this in 4 10 oz glasses. Each glass makes 2 servings for a total of 4 servings. If you want separate servings, use smaller glasses. Or, make it in one big bowl!</p>

<div class="separator">To marinate the mushrooms: rub them down with the olive oil and liquid aminos then place in your dehydrator or oven at its lowest temperature for about 3 hours, or until they have softened and darkened and smell amazing.</div>

<div class="separator">While they are marinating, make the cashew cheese: blend all the ingredients until smooth and thick. Taste and adjust accordingly. Scoop into a bowl lined with cheesecloth and let it sit somewhere for at least 2 hours (or, if you&#8217;ve got time, let it age for a few days).</div>

<div class="separator">When everything is ready, spread your cheese onto your mushrooms and layer with herbs and tomatoes. You can double-shroom it (that is now a term) if you want, and/or use fresh mushrooms instead of marinated. Note: you&#8217;re gonna have lots of left over cashew cheese. Let it sit in a quiet spot overnight then put in the fridge and eat within a week.</div>

<p>I had no idea when I was making this dish how amazing and tasty it would be.  I over-ate.  It was one of the most surprising recipes I have tried in my raw food experiment.   I found this recipe on the rawmazing.com website.  Whether you are trying a raw food diet for the first time or you are primarily eat raw, plant based meals, this site at rawmazing.com is by far the best I have found.  I have quite a few recipes here that I have tried from this site.  No disappointment yet.</p>
<p><strong>Raw Vegan Lasagna with Spinach Walnut Pesto and Walnut “Sausage”</strong></p>
<p>serves 4</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li><span class="Apple-style-span">1 medium zucchini, sliced thin lengthwise</span></li>
<li><span class="Apple-style-span">1 tomato, sliced thin</span></li>
<li><span class="Apple-style-span">Marinara Sauce</span></li>
<li><span class="Apple-style-span">Spinach Walnut Pesto</span></li>
<li><span class="Apple-style-span">Cashew Cheese</span></li>
<li><span class="Apple-style-span">Walnut Sage “Sausage”</span></li>
</ul>
<div>1. Place a layer of zucchini on a plate. Top with marinara sauce, fresh tomato slices and cashew cheese.</div>
<div>2. Top with a layer of zucchini and top that with pesto.</div>
<div>3. Top with another layer of zucchini and sprinkle the walnut pesto and fresh tomatoes on top of that.</div>
<div>4. Finish off with one more layer of zucchini, marinara sauce, cashew cheese, spinach pesto and sprinkle top with walnut sage “sausage”.</div>
<p>&nbsp;</p>
<p><strong>Marinara Sauce</strong></p>
<ul>
<li>1 clove garlic</li>
<li>1 cup sun-dried tomatoes, softened</li>
<li>1/4 cup olive oil</li>
<li>1/2 lemon, juice from</li>
<li>4 dates, soaked until soft and pitted</li>
<li>2 tablespoons water (if needed)</li>
<li>1 teaspoon Italian spices</li>
</ul>
<p>1.  With food processor running, drop garlic in and chop fine.</p>
<p>2.  Add remaining ingredients. Process until smooth.</p>
<p><strong>Spinach Walnut Pesto</strong></p>
<ul>
<li>2 cloves garlic</li>
<li>3 cups spinach</li>
<li>1/3 cup olive oil</li>
<li>1/2 cup walnuts, soaked at least 6 hours, drained and dried</li>
<li>1/2 lemon, juice from</li>
</ul>
<p>1.  With food processor running, drop in garlic.</p>
<p>2.  Add remaining ingredients and process until a paste is formed.</p>
<p><strong>Cashew Cheese:</strong></p>
<ul>
<li>3/4 cup cashews, soaked overnight, drained</li>
<li>1 clove garlic</li>
<li>1 teaspoon lemon juice</li>
<li>pinch Himalayan Salt and pepper</li>
</ul>
<div>1. Place all ingredients in food processor. Pulse until a cottage cheese texture is achieved. Add a little water if necessary.</div>
<p>&nbsp;</p>
<div><strong>Walnut Sage “Sausage”</strong></div>
<div>
<ul>
<li>2 cups walnuts, soaked for at least 6 hours in fridge, drained and rinsed</li>
<li>1 teaspoon sage</li>
<li>1 teaspoon thyme</li>
<li>1 teaspoon marjoram</li>
<li>1 teaspoon fresh rosemary, chopped fine</li>
<li>2 tablespoons nama shoyu</li>
<li>Himalayan salt and pepper to taste</li>
</ul>
<div>1. Place all ingredients in food processor.</div>
<div>2. Process until coarse crumb is achieved.</div>
<p>&nbsp;</p>
<div><strong>To make the rolls:</strong></div>
<div>1. Place a strip of zucchini, cut length wise on the counter.</div>
<div>2. Layer sauce, “cheese”,  pesto, and “sausage” only on 2″ of the strip next to the edge.</div>
<div>3. Roll up and slice in half.</div>
</div>
